Every time I think what to make for Sunday dessert or for a quick thing when guests unexpectedly arrive, I always turn to cupcakes. I find them so easy to make and there are so many varieties that you can never get bored if them. You can play with different taste, from chocolate and vanilla to Guinness, poppy seeds or candy pop texture. Not to mention fillings and decorations. The options are endless. I mainly use the same recipe, that I amended according to my taste and liking and always either add or reduce ingredients depending what else I add. Below is a recipe for orange cupcakes with orange cream cheese frosting.
Ingredients for cupcakes:
Preheat the oven to 180C. Place the butter, sugar and zest in an electric mixer and cream together until fluffy.
Beat the eggs in another bowl and slowly pour to the mix. Once the eggs and the butter is well mixes, slowly add flour.
Prepare 12 hole-bun tray. Put paper cases in the bun tray and divide the mixture between the paper cases. Bake in the centre oven for 18-20 minutes. When cooked they will spring back when lightly pressed. Remove the cakes from the oven, leave to cool in the tin for couple of minutes, then transfer to a wire rack and leave to cool.
- 200g full-fat cheese, at room temperature
- 100g butter
- 300g icing sugar
- zest of 1 orange
Mix all the ingredients together in an electric mixer until light and fluffy. I always add a little bit of colour – orange or any other, depending on your mood and occasions.
Some people like to eat cupcakes without fristing which is also fine. They are delicious either way.
You can decorate it however you wish. I use from spoon to piping bag and various nozzles. You can really use your imagination when planning what flavour and decorations you will use on cupcakes. Here are some photos of few that I made.
