This is another winner for all sort of occasions. Traditional Serbian corn bread that can be transformed into a rich and colourful savoury cake as well as the delicious and easy- to- make entrée. Proja is a favourite dish of many different nations across Balkans. Usually you would only use cheese however I also added gherkins, sun dried tomatoes and peppers.
- 3 eggs
- 250 ml cup of Corn flour
- 250 ml cup of Plain flour
- 250 ml cup of Palenta
- 5 gr baking powder
- 250 ml cup of mineral (sparkling) water
- 250 ml cup of oil
- 250 ml cup of yogurt
- 250 gr Feta Cheese (crumbled and mixed with Cottage Cheese)
- 250 gr Cottage Cheese
- 1 tsp of Salt
- pinch of Sugar
- Sun dried tomatoes (as many or as little as you want). You do not have to use it if you do not wish to. The same goes for: Gherkins and Peppers. Cut into small pieces.
Preheat the oven to 180C. You can use any tin you wish to, even muffins tin. I used the bundt cake tin (fluted cake ring) which I greased previously.
First beat the egg whites to a soft peak. Add yolks and whisks together. Start adding the ingredients from wet to dry, mixing it each time when you add the new ingredients. Start with water, yogurt, oil, plain flour, baking powder, corn flour, palenta, salt sugar and cheese. In the end I mixed gherkins, sun dried tomatoes and peppers. Carefully add to the tin.
Bake for 20 min or until golden brown.
Once cool, tun the bundt cake tin upside down. Grate some hard cheese on the top.
This proja was baked in small muffin tin. I did not add gherkins or sun dried tomatoes but sesame seeds on the top.
